Ingredients:
1 tbs soy sauce
1 tbs black molasses
2 tbs avocado oil
250g Mock Duck
1 onion, finely chopped
6 mushrooms, sliced
12 rice pancakes
2 tbs sesame seeds
1 cucumber, sliced into short lengths
6 spring onions, sliced into lengths
1 lime, quartered
6tbs vegetarian oyster sauce
Instructions
Preheat oven to 180ÂșC/Gas Mark 4.
Mix soy, molasses and oil in bowl, then add Mock Duck, onion and mushrooms. Stir thoroughly to coat.
Place a thin layer of Mock Duck mixture on a greased baking sheet and bake for 20-25 minutes until crispy.
Heat rice pancakes according to packet instructions.
Place Mock Duck, sesame seeds, cucumber, spring onions, lime and oyster sauce in separate serving bowls.
At the table, spread a teaspoon of oyster sauce on warm pancake. Top with a spoonful of Mock Duck, a few sticks of cucumber, a spoonful of spring onion, a sprinkling of sesame seeds and a squeeze of lime.
Roll and eat.
