Ingredients
200g Quinoa
Vegetable oil
2 medium onions
2cm ginger root
Large pinch cayenne pepper
3ml ground turmeric
3ml ground coriander
Large pinch ground cinnamon
2ml salt
400ml water
200gm frozen peas
Instructions
Wash the quinoa in plenty of cold water and drain thoroughly
Chop onions
Peel and grate ginger
Gently stir fry onions for a few minutes until translucent but not browned
Add ginger, pepper, quinoa and stir fry for couple of minutes
Add ground spices and cook for further minute
Add water and bring to boil, leave to simmer with lid on pan
After 15 minutes add peas
Continue to simmer until water is all absorbed and quinoa is soft.
Variation – a clove of garlic can be added with the onions
To serve – fluff the grains with a fork before serving
